Maureen McCoy MS, RD is an Associate Teaching Professor and Dietetic Internship Director in the College of Health Solutions at Arizona State University. Her expertise is in improving food access, health policy and equity, and child and school nutrition. Her research seeks to identify changes in metabolic health outcomes with improvements in food security. McCoy serves on the Honor Health Desert Mission Food Bank board, co-leads the Health Equity and Policy Affinity Network, and leads the Higher Education Food Security Coalition.
McCoy is the faculty advisor for the Pitchfork Pantry, ASU’s student-run pantry that provides healthy food, hygiene products, and clothing. She has formed partnerships with local food banks and establishments to bring healthy food items to students on all four ASU campuses. She loves working with students and getting them involved in their communities.
Before joining academia, McCoy was a dietitian at the University of Florida athletic department, Lifetime Fitness, Washington Elementary School District, and Maricopa County Head Start.
